Minimum 3 years relevant work experience. Experience in the application of food science principles, knowledge of food formuation and food processing is desired. Knowledge of dairy foods development and manufacture is a benefit. Culinary skills or experience a plus.
Principal duties:
The Wisconsin Center for Dairy Research (CDR) is one of the premiere dairy research centers in the
United States. CDR serves as a national leader in strategic research to improve the competitive
position of the dairy industry by linking Center/University faculty, staff, students and the
dairy/food industries in order to address key issues resulting in the transfer of technology and
communication of information.
Principal Duties:
60% 1. Work independently and
collaboratively on projects to help food companies enhance the utilization of cheese and other
dairy ingredients. Develop new and novel food applications for end users of cheese and dairy
ingredients at either a lab or pilot plant scale. Answer technical questions from food companies
as needed.
30% 2. Coordinate/implement the applications lab activities including:
demonstrations for short courses, company visits, and CDR tours, room scheduling, supplies,
maintenance of equipment and facilities as needed. Provide applications/culinary development
support for demonstrations and tours as appropriate.
5% 3. Keep up to date on
food and ingredient technologies by reading trade and scientific journals and receiving additional
training in areas relevant to dairy ingredient and cheese applications as appropriate.
5% 4. Interpret and report results of food applications research to CDR personnel
and outside funding
organizations.
